Chocolate Covered Strawberry Ice Cream

Inspiration

Nothing says Valentine’s Day more than chocolate covered strawberries. We look forward to this time of year simply because it’s chocolate covered strawberry season! For this ice cream, though, we wanted it to have a smooth consistency so we blended the ice cream base ingredients together first and then scattered chocolate chunks for a delightful chocolatey surprise throughout. We also use a little sugar to sweeten the strawberries even more. The sugar helps to create a sweet and delicious strawberry flavor for a wonderful ice cream.


Ingredients

For the Strawberry Ice Cream

  • 1 ½ Cups Frozen Strawberries

  • ¼ Cup Sugar

  • 2 Tbsps Heavy Whipping Cream

  • 1 Cup Crema Lusso

  • 4 Drops Pink Food Coloring

For the Chocolate

  • ¼ Cup Milk Chocolate Chips

  • 2 Tbsps Crema Lusso

For Strawberry Ice Cream

  1. Add the frozen strawberries to a microwave-safe bowl. 

  2. Defrost the strawberries for about a minute in the microwave until they’ve softened. 

  3. Add the softened strawberries, sugar, heavy whipping cream, and food coloring to the blender and blend until smooth. 

  4. Add Crema Lusso and blend again until smooth.

  5. Pour the strawberry ice cream mixture into a plastic container. 

  6. Put the lid on the container and freeze for at least four hours or until completely frozen. 

  7. Scoop and enjoy!

For Chocolate Covered Strawberry Ice Cream

  1. Add the frozen strawberries to a microwave-safe bowl. 

  2. Defrost the strawberries for about a minute in the microwave, until they’ve softened. 

  3. Add the softened strawberries, sugar, heavy whipping cream, and food coloring to the blender and blend until smooth. 

  4. Add Crema Lusso and blend again until smooth.

  5. Pour the strawberry ice cream mixture into a plastic container. 

  6. In another microwave safe bowl, combine the milk chocolate chips and the two tablespoons of Cream Lusso.

  7. Microwave the chocolate for 30 seconds until melted. Use a spoon to stir together, until it’s completely smooth. 

  8. Place the melted chocolate into the refrigerator for two minutes to help it thicken a bit.

  9. After two minutes, spoon small dollops of chocolate into the ice cream mixture. Use a fork to submerge some of the chocolate into the strawberry ice cream while leaving some of the chocolate dollops on top. 

  10. Put the lid on the ice cream container and freeze for at least four hours or until it’s completely frozen. 

  11. Once it is, scoop and enjoy!
