Peppermint Bark Gelato

When we think of Christmas we immediately think of Peppermint bark. We thought it would be fun to recreate the layers of peppermint bark but as gelato, with chocolate, white chocolate, and candy canes.

INGREDIENTS:

White Chocolate Gelato Base

  • 1/4 Cup White Chocolate Chips

  • 1/2 Cup Crema Lusso

Semi-sweet Chocolate Base

  • 1/4 Cup semi-sweet Chocolate Chips

  • 1/2 Cup Crema Lusso

  • Peppermint Bark Additions

  • 1 Peppermint Bark Square

  • 2 Tbsps crushed Candy Canes

INSTRUCTIONS:

For the White Chocolate Gelato Base

In a microwave safe bowl, combine the white chocolate chips and 1/4 cup of Crema Lusso. Microwave the mixture for 30 seconds until melted. Use a spoon to stir it together until completely combined and smooth. (Make sure there are no bits of unmelted white chocolate, unmelted chocolate makes the ice cream grainy.)

Once the white chocolate mixture is completely smooth, whisk in the remaining 1/4 cup of Crema Lusso, until combined.

Pour white chocolate gelato mixture into a plastic container, put the lid on and place in the freezer for at least 4 hours, or until completely frozen.

In a separate microwave safe bowl, combine the semi-sweet chocolate chips and 1/4 cup of Crema Lusso. Microwave the mixture for 30 seconds until melted. Pour the semi-sweet chocolate gelato mixture into a plastic container.

Break up one peppermint bark square and mix it to the chocolate mixture.

Slowly pour the white chocolate gelato mixture on top of the semi-sweet chocolate mixture, if the white chocolate mixes in with the semi-sweet chocolate a little it’s okay.

Sprinkle the crushed Candy Canes on top.

Put the lid on the container and place the peppermint bark gelato mixture in the freezer for at least 4 hours, or until completely frozen.

Once frozen, scoop and enjoy.
