Crema Lusso

Cocoa Powder

Chocolate Melting Wafers (70%)

33 Grams


Add the chocolate wafers, cocoa powder and Crema Lusso to a saucepan.

Melt over a gentle heat, adding Crema Lusso in batches until all has been added and chocolate has melted into a smooth, thick paste (approx. 10 minutes).

Add any remaining Crema Lusso to the saucepan and increase heat to medium.

Stir continually with a large wooden spoon, making sure not to allow the chocolate on the bottom of the pan to scorch.

Bring to temp (160 degrees – approx. 10 minutes).

The end result should be a glossy and smooth, fluid chocolate that is intense in flavor and about half the viscosity of a thick chocolate sauce.

Add whip cream for extra deliciousness.
