Birthday Cake Ice Cream

Birthdays are about fun and celebration!

We love to make our birthday cake ice cream pretty and fun! This ice cream is pink because pink reminds us of birthdays. Then we added sprinkles because nothing says ‘birthday’ like sprinkles! And then, because birthday cakes should always be EXTRA we add birthday cake Oreos to make this birthday cake ice cream extra extra fun!

INGREDIENTS:

  • 1 Cup Crema Lusso

  • 1/2 Cup Duncan Hines Classic White Cake Mix

  • 1/2 Tsp Vanilla Extract

  • Purple food coloring

  • Pink food coloring

  • 5 Birthday Cake Oreos

  • 2 Tbsps Sprinkles

INSTRUCTIONS:

Add the cake mix to a microwave-safe bowl. To heat treat it, microwave the flour in 30 second intervals, stirring between each interval, until the cake mix reaches 165 degrees Fahrenheit. (It usually takes about three rounds.)

Once the cake mix has been heat treated, transfer it to a new bowl.

Slowly add in Crema Lusso, whisking as you go, to dissolve any cake mix clumps.

Whisk in the vanilla extract.

Add a super tiny drop of purple food coloring to the ice cream mixture. The purple will help turn the ice cream mixture a soft shade of white. Then add the pink food coloring, for a clear, soft pink.

Transfer the ice cream mixture to a mini loaf tin or a plastic container.

Sprinkle the sprinkles across the top of the ice cream and break up the Birthday Cake Oreos and sprinkle those on top. Use a spoon to mix the sprinkles and Oreos in.

Cover the ice cream mixture and place it in the freezer. Freeze for at least 4 hours, or until completely frozen.

Once frozen, scoop and enjoy!
