Crepes ‘Gonfie’
Crema Lusso
28 ounces
Eggs
4
Oil
1/3 cup
Sugar
½ cup
Salt
Pinch
Pure Vanilla Extract
2 tsp
Confectioners Sugar
2 tbsp
Fresh Strawberries, quartered

Instructions:
Blend all ingredients together, then refrigerate for about 2 hours or up to 2 days.
Gently stir batter to combine. Brush a nonstick skillet with butter and heat over medium heat. Remove pan from heat and add batter. As the batter is poured, rotate pan to swirl batter evenly. Cook 30 to 60 seconds, until the first side is spotty golden brown. Flip crepe and continue to cook until the second side is spotty golden brown, about 30 seconds. Transfer crepe to a paper towel-lined plate and let cool. Repeat with remaining batter.
Pour Crema Lusso into soft serve, ice cream or gelato machine and follow manufacturer’s churning guidelines. Once churned, fill crepes with frozen Crema Lusso and your choice of other sweet or savory fillings (Nutella highly recommended!). Top with fresh strawberries and confectioners sugar. Yields approx. one dozen crepes.
