Crema Lusso Buttermilk-Style Biscuits
Crema Lusso
1 cup
Cake Flour
1 ½ cups
All Purpose Flour
¾ cup
Baking Powder
1 tbsp
Baking Soda
½ tsp
Sea Salt
1 ¼ teaspoons
Butter
½ cup (divided in half)
Preheat oven to 500 degrees.
Cut butter into ½ inch pieces and refrigerate. In the bowl of a food processor, with a steel blade, pulse together the cake flour, AP flour, baking powder, baking soda and 1 teaspoon of salt. Add half of the butter and pulse until combined, until small crumbles are present, approx. 6-8 times. Add Crema Lusso and pulse until a dough ball forms, about 5-6 times. If dough is too dry (not coming together into a ball) add a little more Crema Lusso.
Dust a dry work surface with flour. Turn the dough out onto the surface. With floured hands, gently press the dough out into a 11x8 inch rectangle, about ¼ to ½-inch thick. Dust lightly with flour and gently fold the dough over in thirds. Roll or press out to a 6x6 inch rectangle about 2 inches thick. Cut dough into 9 squares. Transfer biscuits to a lined baking sheet. Cover loosely. Let rest for 15 minutes at room temperature.
Melt remaining butter and brush tops or biscuits. Sprinkle with remaining sea salt.
Place in oven and turn down the temp to 450 degrees. Bake for 12-16 minutes until the biscuits are golden brown.
Remove to a wire rack to cool for a few minutes. Enjoy!
