OVERNIGHT CHIA SEED PUDDING CUPS

Makes 12- ½ cup servings


Crema Lusso

4 cups 


1 tablespoon

Vanilla Extract


Chia Seeds

12 tbsp 


Blackberry Compote


Fresh Papaya, mashed


Blueberries


Quinoa Granola


Dates


Raw Manuka Honey


INSTRUCTIONS

In a mixing bowl, combine the Crema Lusso liquid mix and vanilla extract.

Whisk in the chia seeds, cover the bowl and refrigerate for at least 2 hours (or overnight), until the chia seeds have absorbed enough moisture to achieve a pudding. Stir every so often over the first two hours, to break up any clumps of chia in the pudding.

Before serving, stir once again to break up any clumps of chia in the pudding.

When ready to serve, remove pudding mixture from refrigerator and layer into small jars, dessert cups, or bowls, and layer with mashed papaya and blackberry compote.

Top with dates, blueberries and quinoa granola and drizzle with raw Manuka honey.

Yields approx. 4 pudding cups.

Pudding will keep in refrigerator for 4-5 days.
